  • 2 lb. Granny Smith apples, peeled, cored and thinly sliced
  • 5 Tbsp. sugar
  • 5 Tbsp. cinnamon
  • 3 c. flour
  • 2 1/2 c. sugar
  • 1 c. vegetable oil
  • 4 eggs
  • 1/4 c. orange juice
  • 1 Tbsp. baking powder
  • 2 1/2 tsp. vanilla
  • 1/4 tsp. salt

    Grease 10-inch tube pan.

    Combine apples, cinnamon and sugar; set aside.

    In large bowl, combine remaining ingredients and blend thoroughly; batter will be heavy.

    Spoon half of batter in pan and top with half of apples.

    Repeat with remaining batter and apples. Bake at 350° for 1 hour and 45 minutes, until top of cake is brown and firm to touch.

    Remove from pan.
