Apple Praline Squash

Ingredients

  • 2 medium acorn squash, halved lengthwise and seeds removed
  • 1/2 c. water
  • 1/4 c. butter
  • 1 large cooking apple, cored and cut into 3/4-inch pieces
  • 1/3 c. packed brown sugar
  • 1/4 tsp. cinnamon
  • 2 tsp. vanilla
  • 2 Tbsp. chopped pecans

    Heat oven to 400°.

    In a 13 x 9-inch baking pan, place squash cut side up.

    Pour water into pan.

    Cover with foil.

    Bake for 40 to 50 minutes or until tender.

    In an 8-inch skillet, melt butter. Stir in apple, brown sugar, cinnamon and vanilla.

    Cook over medium heat (3 to 4 minutes).

    Spoon an equal amount into baked squash half.

    Sprinkle with pecans.
