- 6 tart medium apples, peeled, cored and chopped
- 1 (6 oz.) can frozen apple juice concentrate
- 2 Tbsp. sugar
- 2 Tbsp. ground cinnamon
- 8 large egg whites
- powdered sugar and cinnamon for garnish
Directions

1Preheat oven to 450°.

2In a medium saucepan combine apples, apple juice concentrate, sugar and cinnamon.

3Cook over medium heat, stirring until liquid is evaporated and apples are soft, about 9 to 10 minutes.

4Do not overcook.

5Cool slightly.

6Transfer to a food processor fitted with steel blade and puree (small apple bits may still be visible).

7Pour into mixing bowl.

8Butter bottoms and sides of 8 individual 1 1/4 cup souffle cups.
