Apple Squash Casserole

Ingredients

  • 2 1/2 c. fresh butternut squash
  • 1 1/2 c. apples, pared and cut in large slices
  • 1/4 c. butter or margarine
  • 4 Tbsp. brown sugar
  • 1 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/2 c. nuts (optional)
  • salt to taste

Directions

    Peel vegetable and cut into small slices or chunks.

    Melt 3 tablespoons butter.

    Mix with sugar, cinnamon, nutmeg, nuts and salt. Place a layer of squash in a 2-quart casserole dish. Drizzle with sugar-butter mixture. Top with a layer of apples, then butter-sugar.

    Repeat until all ingredients are used. Dot with remaining butter. Cover and bake 45 to 60 minutes (may be a little less) at 350° until tender. Serves 4.
