Apple Walnut Bread Pudding

- 4 slices firm white bread
- 2 tsp. melted margarine
- 2 medium apples, chopped
- 1/4 c. chopped walnuts
- 2 c. low-fat milk
- 1/2 c. cholesterol free egg product
- 1 tsp. vanilla
- 1 tsp. cinnamon
- 1 (4 serving size) pkg. vanilla cook-and-serve sugar-free pudding
Directions

1Heat oven to 350°.

2Brush with margarine and cut into cubes. Place on cookie sheet and bake 10 minutes or until toasted.

3Place in 8-inch square pan.

4Add apples and walnuts.

5Toss to mix.

6Beat milk, egg product and vanilla in medium bowl with a whisk until well blended.

7Add pudding mix and 1/2 teaspoon cinnamon.

8Bake 30 minutes or until mixture comes to boil.

9Let stand 10 minutes before serving.
