Apple-Walnut Cake

  • 4 c. chopped apples
  • 2 c. sugar
  • 2 eggs
  • 1/2 c. vegetable oil
  • 2 tsp. vanilla
  • 2 tsp. baking soda
  • 2 c. all-purpose flour
  • 2 tsp. cinnamon
  • 1 tsp. salt
  • 1 c. walnuts

Directions

    Combine apples and sugar; let stand.

    Beat eggs slightly; beat in oil and vanilla.

    Mix and sift flour, baking soda, cinnamon and salt.

    Stir in alternately with apple-sugar mixture.

    Stir in walnuts.

    Pour into greased and floured 13 x 9 x 2-inch pan.

    Bake at 350° for about 1 hour or until cake tests done.

    Let stand in pan until quite cool.

    Turn out on rack or frost in pan.
