- 3 lb. lean beef
- 1 qt. water
- 3 tsp. salt
- 5 cloves garlic, chopped
- 1 tsp. marjoram
- 1 Tbsp. sugar
- 1/4 c. liquid shortening
- 8 chili pods or 6 Tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. red pepper
- 3 Tbsp. paprika
- 6 Tbsp. corn meal
- 3 Tbsp. flour and 1 c. water (for thickening)
Directions

1Heat oil in large pot.

2Add meat; cook until almost brown. Add water.

3Cook, covered, over low heat for 1 1/2 to 2 hours. Add remaining ingredients, except thickening; simmer for 30 minutes.

4Mix thickening ingredients; add to chili mixture.

5Cook 5 minutes while stirring.
