Applesauce Nut Bread

Ingredients

  • 2/3 stick margarine (room temperature)
  • 3 Tbsp. sugar
  • 3 large egg whites (room temperature)
  • 1 c. all-purpose flour
  • 2/3 c. graham flour
  • 1 tsp. pumpkin pie spice
  • 1 Tbsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. unsweetened applesauce
  • liquid sugar substitute equal to 3 Tbsp. sugar
  • 1/2 c. chopped nuts

Directions

    Cream margarine and sugar together until light and fluffy. Add egg whites to creamed mixture and beat at medium speed for 30 seconds.

    Stir together flours, spices, baking powder, baking soda and salt until well blended.

    Add to creamed mixture along with applesauce, sweetener and nuts.

    Mix at medium speed only until the flour is moistened (do not overbeat).

    Spread evenly in a 9 x 5 x 3-inch loaf pan that has been greased with margarine.

    Bake at 375° for 45 minutes or until cake tester comes out clean from the center and the bread pulls away from sides of the pan.

    Cool 10 minutes in pan and turn out onto a wire rack to cool to room temperature.
