  • 3/4 c. butter
  • 1 c. sugar
  • 1 egg
  • 2 c. flour
  • 1/4 tsp. baking powder
  • 1 1/3 c. shredded coconut
  • 1/2 c. chopped pecans
  • 1/2 tsp. vanilla
  • 1 (12 oz.) jar apricot preserves

Directions

    In a large bowl, cream butter and sugar. Add egg. Mix well. In separate bowl, combine flour and baking powder. Gradually add to butter mixture. Add coconut, pecans and vanilla. Mix thoroughly. Press 2/3 of dough into a greased 9 x 13 pan. Spread preserves. Crumble remaining dough over preserves. Bake at 350° for 30 minutes. Cool in pan. (Makes 36 bars.)
