- 1 c. sugar
- 1 egg
- 2 c. flour
- 1 1/3 c. coconut
- 1/2 c. nuts
- 3/4 c. butter
- 1/2 tsp. baking powder
- 1 tsp. vanilla
- 1 (12 oz.) jar apricot preserves (may substitute raspberry)
Directions

1Cream butter and sugar.

2Add egg and vanilla.

3Add all dry ingredients.

4Mixture will be stiff.

5Add coconut and nuts.

6Take 2/3 of batter and spread into greased 9 x 13-inch pan.

7Spread jam onto mixture.

8Take remaining 1/3 of mixture and crumble on top of jam evenly.

9Bake in preheated oven at 350° for 30 minutes.
