- 6 oz. butter, softened
- 6 oz. brown sugar
- 8 oz. plain flour, sifted
- 1/2 tsp. baking soda
- 4 oz. rolled oats
- 1/2 tsp. salt
- 1/2 oz. melted butter
- 1 can apricot halves, drained
- 1 lemon rind, grated
- sugar to decorate
Directions

1Beat softened butter with sugar.

2Mix in soda, flour, oats and salt.

3Brush an 8 x 12-inch tin with melted butter.

4Spread half the mixture over the bottom.

5Chop the apricots.

6Mix with lemon rind.

7Spread over the crumb mixture and cover with remaining mixture.

8Cook in moderate oven (350°) for 25 to 30 minutes.

9Cut into bars and leave to cool in tin.

10Sprinkle sugar over. Delicious when topped with ice cream or cream.
