  • 2/3 c. dried apricots
  • 1/2 c. margarine
  • 1/4 c. sugar
  • 1 c. sifted flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. vanilla
  • 1 c. brown sugar
  • 2 eggs, well beaten
  • 1/2 c. chopped nuts
  • 1/3 c. flour
  • powdered sugar

Directions

    Rinse apricots and boil for 10 minutes; drain.

    Cool.

    Chop into fine pieces.

    In small bowl, mix margarine, sugar and 1 cup flour until crumbly.

    In greased and floured 8 x 8 x 2-inch pan, pat mixture down and bake at 350° for 25 minutes.

    Sift together 1/3 cup flour, baking powder and salt; then mix on low speed, brown sugar and eggs.

    Add flour mixture; mix well.

    Stir in vanilla, apricots and nuts.

    Spread over semi-cooled baked layer and bake 30 minutes longer at 350°.

    Cool completely; cut into 1 x 2-inch strips and dust with powdered sugar.
