Ingredients
- 2 1/2 c. plus 1 Tbsp. all-purpose flour
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 1 c. cooking oil
- 2 c. sugar
- 1 jar junior size apricot baby food with tapioca
- 1 tsp. vanilla
- 2 tsp. baking soda, dissolved in 1 c. buttermilk
- raisins or nuts (optional; I use walnuts)
Directions

1Combine flour, salt and cinnamon.

2In another bowl, combine remaining ingredients.

3Stir in flour mixture.

4Pour into 2 well-greased and floured bread loaf pans.

5Bake 1/2 hour in preheated 350° oven, then reduce temperature to 325° and bake for another 1/2 hour.

6Let cool in pans for 15 minutes.
