Ingredients

  • 2 1/2 c. plus 1 Tbsp. all-purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1 c. cooking oil
  • 2 c. sugar
  • 1 jar junior size apricot baby food with tapioca
  • 1 tsp. vanilla
  • 2 tsp. baking soda, dissolved in 1 c. buttermilk
  • raisins or nuts (optional; I use walnuts)

Directions

    Combine flour, salt and cinnamon.

    In another bowl, combine remaining ingredients.

    Stir in flour mixture.

    Pour into 2 well-greased and floured bread loaf pans.

    Bake 1/2 hour in preheated 350° oven, then reduce temperature to 325° and bake for another 1/2 hour.

    Let cool in pans for 15 minutes.
