- 1 c. dried apricots
- 2 Tbsp. butter
- 1 c. sugar
- 1 egg
- 1/4 c. water
- 1/2 c. orange juice
- 1 Tbsp. orange rind
- 2 c. sifted flour
- 3/4 tsp. salt
- 2 tsp. baking powder
- 1/4 tsp. baking soda
- 1/2 c. chopped nuts
Directions

1Preheat oven to 350°.

2Place apricots in saucepan; cover with warm water and let stand 30 minutes.

3Drain.

4Cut into small pieces with scissors.

5Cream butter and sugar thoroughly.

6Add eggs and beat well.

7Stir in water, orange rind and juice.

8Add sifted dry ingredients to creamed mixture and stir until well blended.

9Add apricots and nuts; mix well.

10Pour into a greased 9 x 5-inch loaf pan.

11Let stand for 20 minutes before baking at 350° for 50 to 60 minutes.
