  • 1 c. dried apricots, cut fine
  • 1 egg, beaten
  • 1/4 c. water
  • 1/2 c. orange juice
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • pinch of salt
  • 3/4 c. chopped pecans

Directions

    Soak dried apricots 1/2 hour and cut fine.

    Mix egg, water, orange juice, flour, baking powder, baking soda and pinch of salt. Stir in apricots and nuts.

    Pour in well-greased pan.

    Bake at 350° for 1 hour.

    Cool.
