- 1 c. boiling water
- 1 1/2 c. dried apricots (1 pkg.)
- 1/2 tsp. baking soda
- 1 c. granulated sugar
- 2 eggs
- 2 3/4 c. all-purpose flour
- 3 tsp. double-acting baking powder
- 1 c. chopped nuts
Directions

1Pour boiling water over apricots; let stand until tender. Drain water and save.

2(If you don't have a cup, add water.) Roughly chop apricots.

3Pour liquid into mixing bowl.

4Add baking soda, sugar and eggs; mix well with wooden spoon.

5Add apricots, flour, baking powder and nuts; mix well again.

6Butter and flour two 9 x 5 x 3-inch loaf tins.

7Divide batter into tins; bake in preheated 350° oven for 45 minutes, until straw comes out clean. Cool on racks and serve.
