  • 1 c. boiling water
  • 1 1/2 c. dried apricots (1 pkg.)
  • 1/2 tsp. baking soda
  • 1 c. granulated sugar
  • 2 eggs
  • 2 3/4 c. all-purpose flour
  • 3 tsp. double-acting baking powder
  • 1 c. chopped nuts

Directions

    Pour boiling water over apricots; let stand until tender. Drain water and save.

    (If you don't have a cup, add water.) Roughly chop apricots.

    Pour liquid into mixing bowl.

    Add baking soda, sugar and eggs; mix well with wooden spoon.

    Add apricots, flour, baking powder and nuts; mix well again.

    Butter and flour two 9 x 5 x 3-inch loaf tins.

    Divide batter into tins; bake in preheated 350° oven for 45 minutes, until straw comes out clean. Cool on racks and serve.
