Ingredients

  • 1 c. dried apricots
  • 1 c. sugar
  • 2 Tbsp. butter
  • 1 egg, slightly beaten
  • 1/4 c. water
  • 1/2 c. orange juice
  • 2 c. flour
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1 tsp. salt
  • 1/2 c. chopped walnuts

Directions

    Soak apricots in warm water to cover, at least 1/2 hour. Drain and wipe dry.

    Cut into quarters.

    Blend and combine sugar, butter and egg.

    Stir in water and orange juice.

    Add dry ingredients.

    Place in 9 x 5-inch loaf pan, greased and floured. Bake at 350° about 1 hour.
