- 1 c. dried snipped apricots
- 2 c. warm water
- 1 c. sugar
- 2 Tbsp. softened butter
- 1 egg
- 3/4 c. orange juice
- 2 c. flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 3/4 c. chopped pecans
Directions

1Soak apricots in water 30 minutes.

2Cream sugar, eggs and butter and add orange juice.

3Combine all dry ingredients.

4Drain apricots and add to batter.

5Pour into a greased and floured pan, 9 x 5 x 3-inch.

6Bake in 350° oven 50 minutes.

7Cool 10 minutes. Makes 1 loaf.

8Slice and spread with lite cream cheese.
