Apricot Breakfast Bars

Ingredients

  • 1.2 C dried apricots, copped
  • 2 C water
  • 1/4 C raw honey
  • 1.5 C rolled oats, raw
  • 1.5 C whole wheat flour (or gluten free flour)
  • 1/2 C walnuts, chopped
  • 1/2 C espalier pressed oil
  • 1/2 C raw honey

Directions

    1. mix apricots, water and 1/4 C honey in saucepan. Bring to boil then simmer uncovered on low heat for 10 minutes.

    2. Mix oats, flour, walnuts, oil and 1/2 C honey and press half of mix into bottom of 8x8 pan.

    3. Spread apricot mix on top and sprinkle the rest of the oat mix on top.

    4. Bake 0 - 30 minutes at 350 degrees until lightly browned.

    Cool and cut into 16 squares.
