- 1 c. grated cheese (Cheddar)
- 1/2 c. buttermilk
- 1/2 c. oil
- 2 eggs
- 1 to 3 jalapeno peppers, chopped fine
- 1 1/2 c. self-rising corn meal
Directions

1Grease an 11-inch iron skillet with Crisco solid shortening. Shake 1 tablespoon meal around on bottom. Put corn bread mix in the cold skillet and bake 48 minutes in a preheated 400° oven.
