  • 1 c. chopped onion
  • 1 c. grated cheese (Cheddar)
  • 1/2 c. buttermilk
  • 1/2 c. oil
  • 2 eggs
  • 1 to 3 jalapeno peppers, chopped fine
  • 1 1/2 c. self-rising corn meal

    Grease an 11-inch iron skillet with Crisco solid shortening. Shake 1 tablespoon meal around on bottom. Put corn bread mix in the cold skillet and bake 48 minutes in a preheated 400° oven.
