Apricot Chicken

Ingredients

  • 3 to 4 lb. fryer or 8 split chicken breast (I like to use chicken breast)
  • 1 (8 oz.) bottle Russian dressing
  • 1 envelope onion soup mix
  • 1 (8 oz.) jar apricot preserves

Directions

    Place chicken in a shallow baking dish or pan.

    Skin side up. In a separate bowl; mix other ingredients and spread over chicken. Baste often.

    Bake covered 1 hour, then uncovered 1 hour in a 300° oven.
