- 3 1/2 lbs chicken parts
- 1/2 cup flour, seasoned
- 2 tbsp oil
- 1 large onion, sliced
- 1/2 cup dried apricots, halved
- 3 cups apricot nectar
- 1 pkt onion soup mix
- None None Steamed rice, to serve
Directions

1Preheat the oven to 350°F.

2Toss chicken pieces in flour, shaking off excess. Heat oil in a large skillet on high heat. Cook chicken in 2 batches for 3-4 mins each side, until browned. Transfer to a large baking dish. Sprinkle with onion and apricots.

3Combine apricot nectar and soup mix. Pour over chicken mixture.

4Bake, covered, for 40 mins. Uncover and bake for 10 mins, until the chicken is cooked through. Serve with steamed rice.
