Salmon Mousse

Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 c. cold water
  • 1/2 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1 Tbsp. finely grated onion
  • dash of hot pepper sauce
  • 1/4 tsp. sweet paprika
  • 1 tsp. salt
  • 2 Tbsp. chopped dill
  • 2 c. flaked salmon (canned or poached), bones removed
  • 1 c. heavy cream
  • crackers or cucumber slices

Directions

    Soften gelatin in cold water in large bowl.

    Stir in boiling water and whisk the mixture slowly until gelatin dissolves.

    Cool to room temperature.

    Whisk in mayonnaise, lemon juice, grated onion, hot pepper sauce, paprika, salt and dill.

    Blend and refrigerate for 20 minutes.
