- 2 c. dried apricots or fresh may be used
- 3/4 c. sugar
- 2 Tbsp. cream
- 1/4 c. butter
- 2 eggs
Directions

1Wash apricots and cover with water. Simmer 40 minutes or until all water is evaporated.

2Beat until smooth; cool.

3Cream butter and sugar; add egg yolks.

4Beat well.

5Add cream and apricots.

6Beat until well mixed.

7Fold in stiffly beaten egg whites.

8Pour in baked pie shell.

9Bake in 350° oven until firm. Cool.

10Top with whip cream.
