- 3 c. pineapple juice
- 1/2 c. date pieces (optional)
- 1 tsp. vanilla (optional)
- 3 Tbsp. cold water
- 3 Tbsp. cornstarch or arrowroot
- 6 c. apricot halves
- granola or Grape-Nuts
Directions

1Blend first 3 ingredients until smooth.

2Bring to boil in saucepan.

3Thicken with cornstarch and cold water mixed together. Cook several minutes, stirring constantly, until thick and clear. Arrange apricot halves in a 9 x 12-inch baking dish.

4Pour sauce over apricots and top with granola.

5Bake at 350° for 30 minutes. Yields 6 servings.
