  • 3 c. pineapple juice
  • 1/2 c. date pieces (optional)
  • 1 tsp. vanilla (optional)
  • 3 Tbsp. cold water
  • 3 Tbsp. cornstarch or arrowroot
  • 6 c. apricot halves
  • granola or Grape-Nuts

Directions

    Blend first 3 ingredients until smooth.

    Bring to boil in saucepan.

    Thicken with cornstarch and cold water mixed together. Cook several minutes, stirring constantly, until thick and clear. Arrange apricot halves in a 9 x 12-inch baking dish.

    Pour sauce over apricots and top with granola.

    Bake at 350° for 30 minutes. Yields 6 servings.
