Ingredients
- 1/2 c. butter or margarine
- 1 c. sugar
- 1 tsp. grated lemon rind
- 2 eggs, separated
- 1 c. flour, sifted
- 1 tsp. salt
- 1/4 tsp. soda
- 1 (1 lb.) jar apricot jam
- 1/2 c. nuts, finely chopped
Directions

1Cream butter or margarine with 3/4 cup sugar and lemon rind until fluffy.

2Add egg yolks, one at a time, beating well after each addition.

3Sift together flour, salt and soda.

4Blend into creamed mixture.

5Spread batter in 12 x 8-inch baking pan.

6Cover batter with jam.

7Beat egg whites until stiff, but still moist. Add 1/4 cup sugar, beating until meringue forms stiff peaks.

8Fold in nuts.

9Spread on apricot jam layer.

10Bake at 350° for 45 minutes or until firm.

11Cut into squares and cool.

12Makes 48 (2-inch) squares.
