- 2 c. dried apricots, diced
- 1 c. boiling water
- 4 Tbsp. shortening
- 1 1/2 c. sugar
- 2 eggs, lightly beaten
- 3 c. sifted flour
- 1/4 tsp. salt
- 2 tsp. baking soda
- 1 c. chopped nuts
Directions

1Mix diced apricots and boiling water and let stand 15 minutes. Cream together shortening, sugar and eggs; add apricots and water to mixture.

2Stir in flour, salt and baking soda.

3Add nuts to mixture.

4Bake at 350° for 1 hour.

5Makes 2 small or 1 large loaf.
