  • 2 c. dried apricots, diced
  • 1 c. boiling water
  • 4 Tbsp. shortening
  • 1 1/2 c. sugar
  • 2 eggs, lightly beaten
  • 3 c. sifted flour
  • 1/4 tsp. salt
  • 2 tsp. baking soda
  • 1 c. chopped nuts

Directions

    Mix diced apricots and boiling water and let stand 15 minutes. Cream together shortening, sugar and eggs; add apricots and water to mixture.

    Stir in flour, salt and baking soda.

    Add nuts to mixture.

    Bake at 350° for 1 hour.

    Makes 2 small or 1 large loaf.
