- 1 c. strained baby apricots
- 1/4 c. sugar

1Beat 3 egg whites until very stiff. Fold a cup of strained baby apricots into them together with lemon juice and sugar.

2Pour into crust. Bake in a 350° oven for 25 to 30 minutes.
