  • prepared or bought pie crust
  • 3 egg whites
  • 1 Tbsp. lemon juice
  • 1 c. strained baby apricots
  • 1/4 c. sugar

Directions

    Beat 3 egg whites until very stiff. Fold a cup of strained baby apricots into them together with lemon juice and sugar.

    Pour into crust. Bake in a 350° oven for 25 to 30 minutes.
