- 1 c. bread crumbs
- 1 c. dried apricots, stewed and riced
- 1 egg, separated
- 1/2 c. sugar
- 6 marshmallows
Directions

1Saturate the bread crumbs with the juice drained off the stewed fruit (or a little hot water).

2Add fruit and the beaten egg yolk to the crumbs.

3Stir in sugar.

4Beat the egg white until stiff; fold into fruit mixture.

5Pour pudding into buttered ramekins (or a glass baking dish).

6Bake in a moderate oven (350°).

7When nearly done, remove from oven, top with a marshmallow and return to oven until marshmallow is toasted.
