- 4 chicken cutlets
- 2 onions, finely chopped
- 3 Tbsp. butter
- 1 clove garlic, crushed
- 1/2 tsp. ground ginger
- 1 1/2 c. water
- 2 tomatoes, peeled and chopped
- 1/2 tsp. cinnamon
- 2 cardamom seeds, crushed
- 1 tsp. salt
- 1/2 tsp. saffron
- 4 to 8 apricot halves
Directions

1Saute onions in butter until golden.

2Add chicken, garlic, ginger, water, tomatoes, cinnamon, cardamom and salt.

3Cover; cook on low heat for 45 minutes.

4Add saffron; cook an additional 5 minutes.

5Serve garnished with warm apricot halves.
