- 1 armadillo, dressed
- salt and pepper
- 4 onions, chopped
- vegetable oil
- 1 can mushrooms
- 2 bay leaves
- 1 garlic clove, sliced
- 2 c. rice, uncooked
Directions

1Boil armadillo in salted water until tender.

2Remove meat from bones and save the broth.

3In a large baking dish or Dutch oven, saute onions in oil until softened.

4Add the meat and cook for about 5 minutes.

5Add 6 cups broth, bay leaves, garlic, rice, salt and pepper.

6Stir and bake at 375° at least 30 minutes or until rice is done.
