Ingredients

  • 1 armadillo, dressed
  • salt and pepper
  • 4 onions, chopped
  • vegetable oil
  • 1 can mushrooms
  • 2 bay leaves
  • 1 garlic clove, sliced
  • 2 c. rice, uncooked

Directions

    Boil armadillo in salted water until tender.

    Remove meat from bones and save the broth.

    In a large baking dish or Dutch oven, saute onions in oil until softened.

    Add the meat and cook for about 5 minutes.

    Add 6 cups broth, bay leaves, garlic, rice, salt and pepper.

    Stir and bake at 375° at least 30 minutes or until rice is done.
