- 2 tablespoons lard or 2 tablespoons peanut oil
- 2 cups long grain white rice
- 2 garlic cloves, minced
- 1 medium onion, chopped
- 1 (8 ounce) can tomato sauce
- 1 1/4 cups chicken broth
- 2 cups water
- 1/2 teaspoon chili powder (use up to 2 Tbsp, to taste)
- 1 teaspoon black pepper
- 1 teaspoon cumin
Directions

1Heat the lard in a large heavy saucepan over medium-high heat.

2Add the rice and stir until rice is toasted.

3Add the garlic and onion (if using); cook and stir until the onion just begins to brown.

4Stir in the tomato sauce, chicken broth, water, chili powder, and salt.

5Bring to a boil, then reduce heat to low, cover, and cook for 20-25 minutes, or until rice is tender.

6Let stand for 5 minutes, covered, before serving.
