- 5 large eggs, beaten
- 2 jars marinated artichoke hearts, chopped
- 8 oz. sharp Cheddar cheese, grated
- 6 to 8 green onions, chopped
- 1 large clove garlic, minced
- 10 saltine crackers, crushed
- 1/2 tsp. salt
- 1/8 tsp. red pepper
Directions

1Saute onion and garlic in liquid from artichokes.

2Mix all together and bake in a well-greased 9 x 12 pan for 35 to 40 minutes at 350°.

3Best if made a day in advance and let absorb flavors before serving.

4Serve cold or hot.
