  • 5 large eggs, beaten
  • 2 jars marinated artichoke hearts, chopped
  • 8 oz. sharp Cheddar cheese, grated
  • 6 to 8 green onions, chopped
  • 1 large clove garlic, minced
  • 10 saltine crackers, crushed
  • 1/2 tsp. salt
  • 1/8 tsp. red pepper

Directions

    Saute onion and garlic in liquid from artichokes.

    Mix all together and bake in a well-greased 9 x 12 pan for 35 to 40 minutes at 350°.

    Best if made a day in advance and let absorb flavors before serving.

    Serve cold or hot.
