Artichoke Chicken

  • 1 (9 oz.) pkg. frozen artichoke hearts, thawed
  • 4 chicken breasts (boneless, skinless)
  • 4 Tbsp. sweet Vermouth
  • 1 (16 oz.) can chopped tomatoes
  • 1 c. sharp Cheddar cheese, grated
  • 8 slices bacon, cooked and drained
  • garlic (fresh or powder)
  • black pepper

Directions

    Preheat oven to 350°.

    Place the artichoke hearts in the bottom of a baking dish.
  3. 3
    Place chicken breasts on top of artichokes.
  4. 4
    Season lightly with garlic and pepper. Lay bacon slices on top of chicken and spoon Vermouth over all.

    Bake for 40 minutes, draining excess liquid.

    Combine the tomatoes and cheese and spoon over the chicken.

    Add more garlic, pepper and Vermouth if desired.

    Bake for 20 minutes. Makes 4 servings. Serve over rice with a green salad.
