  • 2 jars marinated artichoke hearts, chopped
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 4 eggs
  • 1/4 c. fine dry bread crumbs
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 tsp. oregano or basil
  • 1/8 tsp. Tabasco
  • 1/2 lb. (2 c.) grated Cheddar cheese
  • 2 Tbsp. minced parsley

Directions

    Drain artichoke hearts and reserve marinade.

    Saute artichoke hearts, onion and garlic in 1 tablespoon of marinade.

    Beat eggs in a bowl.

    Add bread crumbs, salt, pepper, oregano and Tabasco. Stir in cheese, parsley and artichoke/onion mixture.

    Turn into pan and bake 25 to 30 minutes at 350°.

    When toothpick comes out clean, it is done.
