- 1 (9 oz.) pkg. frozen artichoke hearts
- lemon juice
- 2 Tbsp. olive oil
- 1 1/2 Tbsp. butter
- flour
- 4 eggs
- 1/2 tsp. salt
- pinch of pepper
- 2 Tbsp. milk or water
Directions

1Thinly slice the artichoke hearts vertically and spread out on paper towels.

2Pat dry when thawed and drizzle with lemon juice. Heat olive oil and butter in a 10-inch skillet with an ovenproof handle.

3Coat artichoke heart slices with flour and brown on both sides in hot fat.

4Beat eggs slightly.

5Mix in salt, pepper and milk.

6Pour over artichoke slices in skillet.

7Bake at 350° for 5 to 10 minutes or until egg mixture is set.

8Makes 4 servings.
