- 2 (9-inch) frozen pie shells (one for top and one for bottom)
- 1 small Mozzarella cheese, shredded or 2 c. shredded
- 4 eggs
- 1 pkg. frozen artichokes or 1 can artichokes, drained
- chopped parsley
- 3 cloves garlic, chopped
- 2 Tbsp. olive oil
Directions

1Beat eggs; add Mozzarella, salt, pepper and parsley.

2If frozen, boil artichokes until cooked.

3Drain well and brown in oil with garlic.

4Pour mixtures into pie shell.

5Bake 1 hour at 350°.
