Ingredients

  • 2 (6 oz.) jars marinated artichokes
  • 1 medium onion, chopped
  • 4 eggs, beaten
  • 1/4 c. fine, dry bread crumbs
  • 1/2 tsp. dried oregano
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • dash of hot sauce
  • 1 clove garlic, minced
  • 2 c. (8 oz.) shredded Cheddar cheese

Directions

    Drain artichokes, reserving liquid; set aside.

    Cook onion in reserved liquid in skillet until tender.

    Combine eggs, bread crumbs, oregano, salt, pepper and hot sauce in a large mixing bowl; mix well.

    Add onion, artichokes, garlic and cheese; stir well.

    Pour into a greased 13 x 9 x 2-inch baking pan; bake at 325° for 30 minutes or until set.

    Cut into squares to serve. Yields 4 dozen appetizer servings.
