- 1 1/2 large bunches arugula
- 1 large tomato, cored
- 1/4 red onion, thinly sliced
- 2 Tbsp. lemon juice
- 3 Tbsp. balsamic vinegar
- 5 Tbsp. olive oil
- 1/8 tsp. salt
- 1/4 tsp. ground white pepper
Directions

1Remove and discard arugula stems and cut leaves crosswise into 1/2-inch pieces.

2Transfer to bowl.

3Cut tomato into 1/2-inch dice; add to arugula.

4Add onion to bowl.

5Whisk remaining ingredients. Add seasoning.

6Toss salad with dressing.

7Transfer veal chops to warm dinner plate and top with arugula salad (approximately 1 cup).
