  • 1 cup soy sauce
  • 1/2 cup mirin
  • 1/2 cup thinly sliced scallions (about 2 oz.)
  • 2 tablespoons hot chili sauce (such as sriracha)
  • 4 garlic cloves, minced
  • 2 teaspoons grated peeled fresh ginger (from 1 [1-in.] piece ginger)
  • 1 1/2 teaspoons orange zest
  • 2 tablespoons fresh juice (from 1 orange)

    ["Whisk together soy sauce, mirin, scallions, chili sauce, minced garlic, ginger, orange zest, and orange juice in a medium bowl until well combined. Place your favorite cut of meat (we recommend shrimp, swordfish steaks,or boneless, skinless chicken thighs) in a large ziplock plastic freezer bag. Pour marinade over meat.
