Asian Mussels With Pork

Ingredients

  • 2 tbsp oil
  • 150 g pork tenderloin, cut into thin strips
  • 100 g bacon, diced
  • 2 None shallots, peeled and finely diced
  • 2 cloves garlic, peeled and finely diced
  • 1 stalk lemon grass, halved, centre finely chopped
  • 2 cm piece fresh root ginger, peeled and grated
  • 4 tbsp soy sauce
  • 1 None lime, juiced
  • 2 tbsp fish sauce
  • 100 g bean sprouts
  • 2 kg fresh mussels, scrubbed, beards removed, any open shells discarded
  • 6 sprigs fresh coriander, little reserved for garnish, remainder finely chopped
  • 75 g peanuts, roughly chopped

Directions

    Heat the oil in a Dutch oven and sear the pork and bacon until browned. Add the shallots, garlic, lemongrass and ginger and saute for 2 mins. Add the soy sauce, lime juice, fish sauce, beansprouts, mussels and 1/2 cup water. Cover and simmer for 8 mins, until the mussels have opened.

    Discard any unopened shells and sprinkle with the cilantro and peanuts.
