Asparagus Casserole

- 3 eggs, well beaten
- 1/4 tsp. pepper
- 1 c. 1/4-inch cubes Cheddar cheese
- 3 Tbsp. butter
- 1 tsp. salt
- 3/4 c. cracker crumbs
- 1 c. milk
- 10 oz. frozen asparagus, cooked and drained
- 1 pimento, cut into pieces (nice for color, optional)
Directions

1Add to the eggs the salt, pepper, cracker crumbs, pimento, cheese and milk.

2Stir in asparagus.

3Pour into greased 1 1/2-quart (7 x 11-inch) casserole.

4Pour butter over top.

5Bake, uncovered, in moderate oven (350°) until custard has set, about 30 minutes.

6Makes 6 to 8 servings.
