Asparagus Chicken Bake

  • 1/4 c. butter
  • 1/2 lb. fresh asparagus, cut in pieces, cooked
  • 2 or more c. chopped, cooked chicken
  • 1/4 lb. grated sharp cheese
  • 1 can cream of chicken soup
  • 1 Tbsp. lemon juice
  • chopped pimiento
  • 1 (8 oz.) pkg. corn muffin mix

Directions

    Melt butter in an 8-inch square pan; drain asparagus, reserving 1/2 cup asparagus liquid.

    Arrange asparagus in butter; add chicken.

    Sprinkle with the cheese.

    Prepare muffin mix according to package directions.

    Carefully spoon mixture on top of cheese.

    Bake in a 400° oven 30 minutes or until muffin top is brown.
