- 1/2 lb. asparagus, cleaned
- 1 small onion, chopped
- 3 eggs
- 4 Tbsp. oil (more or less)
Directions

1Wash asparagus.

2Cut off the hard ends.

3Cut into quarter-inch pieces.

4In a skillet, combine asparagus pieces, chopped onion and oil.

5Simmer until not quite done.

6Break eggs on the mixture and mix all.

7Cook as you would scrambled eggs.
