- 1 (14 1/2 oz.) can cut asparagus
- 3/4 c. asparagus liquid
- 3 Tbsp. (3 envelopes) unflavored gelatin
- 3 c. cottage cheese
- 1/3 c. buttermilk
- 1 c. finely chopped celery
- 1 Tbsp. minced onion
- 1/2 tsp. salt
Directions

1Drain asparagus, reserving liquid.

2Puree asparagus and set aside.

3Soften gelatin in the liquid over low heat, stirring occasionally, until dissolved.

4In a mixing bowl, beat cottage cheese until fairly smooth; add buttermilk and dissolved gelatin. Add asparagus; mix in celery, onion and salt.

5Turn mixture into mold until set.

6Makes 8 to 10 servings.
