Asparagus Rolls

  • 24 thin asparagus spears trimmed to 5 inch lengths
  • 12 slice thin white bread
  • 1/2 cup mayonnaise
  • 2 tsp lemon juice
  • 1 tsp dill weed
  • 1 tsp tarragon leaves

    Cook asparagus in boiling water for 1 minute.

    Rinse with cold water.

    Trim crusts from bread slices.

    Flatten slices with a rolling pin.

    Combine lemon juice, mayonnaise, dill weed and tarragon.

    Spread mixture evenly on both sides of bread.

    Place 2 asparagus spears on center of each bread slice.

    Carefully roll up and secure with wooden toothpick.

    Place on baking sheet.

    Bake at 450F for 8 minutes or until golden.

    Remove toothpicks before serving.
