  • 2 Tbsp. flour
  • 2 Tbsp. butter
  • 3/4 c. milk
  • 1 tsp. chopped onion
  • 1 1/2 c. grated American cheese
  • 3 eggs, separated
  • 1 1/2 c. cooked green asparagus
  • salt and pepper to taste

Directions

    Make a sauce with butter, flour and milk.

    Cook over low heat until thickened and smooth; remove from fire.

    Add onions and cheese and stir until cheese is melted.

    Add beaten egg yolks and blend well.

    Carefully add the asparagus, cut in small pieces. Season to taste.

    Fold in beaten egg whites.
