- 2 Tbsp. flour
- 2 Tbsp. butter
- 3/4 c. milk
- 1 tsp. chopped onion
- 1 1/2 c. grated American cheese
- 3 eggs, separated
- 1 1/2 c. cooked green asparagus
- salt and pepper to taste
Directions

1Make a sauce with butter, flour and milk.

2Cook over low heat until thickened and smooth; remove from fire.

3Add onions and cheese and stir until cheese is melted.

4Add beaten egg yolks and blend well.

5Carefully add the asparagus, cut in small pieces. Season to taste.

6Fold in beaten egg whites.
