- 2 1/2 cups self-rising flour
- 1/2 cup sugar
- 3/4 cup milk
- 8 tbsp (1 stick) butter, melted and cooled slightly
- 2 None eggs
- 1 tsp vanilla extract
Directions

1Preheat the oven to 350°F. Lightly grease a 12-cup muffin pan or line with paper liners.

2Sift flour into a large bowl. Stir in sugar.

3Whisk milk, butter, eggs and vanilla in a medium bowl.

4Make a well in center of dry ingredients. Add milk mixture and mix lightly, until just combined. Do not over-mix. Spoon into prepared muffin pan.

5Bake 15-20 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
