  • 1 cup sugar
  • 3 eggs
  • 1/2 cup butter, melted
  • 4 Lemons, zested
  • 1 cup lemon juice, freshly squeezed

Directions

    Place lemon juice, zest, butter and sugar in pan on low.

    Stir until butter is melted and sugar is dissolved.

    Beat eggs in a separate bowl.

    Slowly add to lemon mixture (do this slowly or you'll have scrambled eggs) stirring constantly with wooden spoon.

    Stir occasionally until it thickens and coats the spoon.

    Transfer to a bowl or jar.
