Austrian Easter Brioche Rolls

Ingredients

  • 2 oz butter
  • 1/2 cup skim milk
  • .5 oz dried yeast
  • 3.5 oz Xylitol (birch sugar) or granualted sugar
  • 3.5 oz low fat cream cheese
  • 2 medium eggs
  • 1 1/4 lbs all purpose flour
  • 2 tbsp granulated sugar
  • None None powdered sugar for dusting
  • None None parchment paper

    In a sauce pan, melt the butter, add the milk, heat till lukewarm and add the yeast. Mix the sugar, yeast mixture and cream cheese with a whisk. Stir in 1 egg. Add the flour with a pinch of salt and knead with the dough hook of a hand mixer for 5 minutes to make a smooth dough. Cover the dough and leave in a warm place for about 45 minutes.

    Divide the dough into 12 equal pieces and shape into balls. Put the balls on 2 baking sheets lined with parchment paper. Slice each dough ball with three deep cuts from the center outwards. Cover again for 10 minutes. Mix 1 egg with 1 tsp milk and brush the rolls. Sprinkle half of the rolls with granulated sugar.

    Preheat the oven to 350 F°. Place an ovenproof bowl with boiling water in the preheated oven. Bake the rolls one tray at a time, for about 18 minutes each. Take out, and let cool. Sprinkle bread with powdered sugar.
